Shahi Paneer Recipe

Here is a rich, creamy, and restaurant-style Shahi Paneer Recipe — a royal North Indian paneer curry made with aromatic spices, nuts, and cream.

Ingredients
  

  • Paneer cottage cheese – 250g (cubed)
  • Onions – 2 medium chopped
  • Tomatoes – 2 medium chopped
  • Cashew nuts – 10–12 soaked in warm water
  • Ginger-garlic paste – 1 tbsp
  • Green chilies – 1–2 slit
  • Milk or water – ½ cup
  • Fresh cream – ¼ cup
  • Kumbh Shahi Paneer Masala – 2 tbsp
  • Kumbh Garam masala – ½ tsp optional
  • Butter or ghee – 2 tbsp
  • Salt – to taste
  • Sugar – ½ tsp optional, balances flavors
  • Coriander leaves – for garnish

Method
 

Step 1: Prepare Base
  1. Boil onions, tomatoes, and cashews together in 1 cup water for 8–10 mins.
  2. Cool and blend to a smooth paste.
Step 2: Cook Gravy
  1. Heat butter/ghee in a pan. Add green chilies and ginger-garlic paste. Sauté for 1 min.
  2. Add the blended paste and cook until oil begins to separate.
  3. Add Kumbh Shahi Paneer Masala, salt, and sugar. Cook for 2–3 mins.
Step 3: Add Paneer
  1. Add paneer cubes and stir gently.
  2. Pour in milk or water to adjust consistency.
  3. Simmer for 5–6 minutes on low heat.
Step 4: Finish
  1. Add cream and garam masala (if using).
  2. Mix gently and turn off the flame.
  3. Garnish with coriander leaves.

Notes

Butter naan, tandoori roti, chapati, or jeera rice.
Use fresh soft paneer for best results.
For extra richness, add 1 tbsp khoya (mawa) to the gravy.
Add saffron strands soaked in warm milk for a royal touch.
