
Mixed Vegetable Curry with Kumbh Kitchen King Masala

Step 1: Prepare the Veggies
- Parboil or steam the chopped vegetables until 80% cooked. Set aside.
Step 2: Make the Curry Base
- Heat oil/ghee in a pan.
- Add onions and sauté until golden brown.
- Add green chili and ginger-garlic paste. Sauté till raw smell goes.
- Add tomato puree. Cook until oil separates from the sides.
Step 3: Add Spices
- Add Kumbh Kitchen King Masala, turmeric, red chili powder, and salt.
- Stir well and cook for 1–2 minutes.
Step 4: Add Vegetables
- Add the steamed vegetables and mix gently.
- Pour 1 cup water (adjust consistency).
- Cover and simmer on low flame for 8–10 minutes.
Step 5: Finishing Touch
- Add cream or curd (if using), crushed kasuri methi.
- Mix gently and simmer for another 2 minutes.
- Garnish with fresh coriander.
