Mixed Vegetable Curry with Kumbh Kitchen King Masala

Here is a delicious and easy cooking recipe using Kumbh Kitchen King Masala — a perfect all-in-one spice blend to make Mixed Veg Curry, one of the most popular North Indian dishes.

Ingredients
  

  • Mixed vegetables carrot, beans, peas, potato, cauliflower – 2 cups, chopped
  • Onions – 2 medium finely chopped
  • Tomatoes – 2 medium pureed
  • Ginger-garlic paste – 1 tbsp
  • Green chili – 1 slit
  • Kumbh Kitchen King Masala – 1½ tbsp
  • Kumbh Turmeric powder – ¼ tsp
  • Kumbh Red chili powder – ½ tsp
  • Salt – to taste
  • Oil or ghee – 2 tbsp
  • Water – 1 to 1½ cups
  • Fresh cream or curd – 2 tbsp optional for richness
  • Kumbh Kasuri methi dried fenugreek leaves – 1 tsp
  • Coriander leaves – for garnish

Method
 

Step 1: Prepare the Veggies
  1. Parboil or steam the chopped vegetables until 80% cooked. Set aside.
Step 2: Make the Curry Base
  1. Heat oil/ghee in a pan.
  2. Add onions and sauté until golden brown.
  3. Add green chili and ginger-garlic paste. Sauté till raw smell goes.
  4. Add tomato puree. Cook until oil separates from the sides.
Step 3: Add Spices
  1. Add Kumbh Kitchen King Masala, turmeric, red chili powder, and salt.
  2. Stir well and cook for 1–2 minutes.
Step 4: Add Vegetables
  1. Add the steamed vegetables and mix gently.
  2. Pour 1 cup water (adjust consistency).
  3. Cover and simmer on low flame for 8–10 minutes.
Step 5: Finishing Touch
  1. Add cream or curd (if using), crushed kasuri methi.
  2. Mix gently and simmer for another 2 minutes.
  3. Garnish with fresh coriander.
