Kumbh Biryani Masala Recipe

Here’s a rich and aromatic Biryani Recipe using Kumbh Biryani Masala – perfect for festive meals or weekend indulgence. This recipe includes layered basmati rice, spiced vegetables and fragrant herbs.

Ingredients
  

For Rice:
  • Basmati rice – 2 cups soaked for 30 minutes
  • Water – 6–7 cups
  • Salt – 1 tsp
  • Kumbh Whole spices – 2 bay leaves 4 cloves, 4 cardamoms, 1 inch cinnamon
For Biryani Gravy:
  • Mixed vegetables – 2 cups potato, carrots, beans, peas
  • Onions – 2 large thinly sliced
  • Tomatoes – 2 medium chopped
  • Ginger-garlic paste – 1 tbsp
  • Yogurt – ½ cup
  • Kumbh Biryani Masala – 2 tbsp
  • Kumbh Turmeric powder – ¼ tsp
  • Kumbh Red chili powder – ½ tsp optional
  • Salt – to taste
  • Oil or ghee – 3 tbsp
  • Mint leaves – handful
  • Coriander leaves – handful
  • Saffron – a few strands soaked in warm milk optional
  • Fried onions – for garnish

Method
 

Step 1: Cook the Rice
  1. Boil water with salt and whole spices.
  2. Add soaked rice and cook until 90% done.
  3. Drain and set aside.
Step 2: Prepare the Gravy
  1. Heat oil/ghee in a heavy pan.
  2. Add onions, sauté until golden brown.
  3. Add ginger-garlic paste, cook for a minute.
  4. Add tomatoes, turmeric, chili powder, salt, and Kumbh Biryani Masala.
  5. Cook until tomatoes soften.
  6. Add vegetables and cook for 5–10 mins.
  7. Add yogurt, cook until mixture thickens and oil separates.
  8. Add mint and coriander leaves.
Step 3: Layer the Biryani
  1. In a heavy-bottomed pot, spread half of the rice.
  2. Add the gravy mixture on top.
  3. Add the remaining rice as the top layer.
  4. Sprinkle saffron milk, fried onions, and more mint/coriander.
Step 4: Dum Cook
  1. Cover with a tight lid or seal with dough.
  2. Cook on low heat for 20–25 minutes (or place on a tawa for gentle heat).
