
Kumbh Biryani Masala Recipe

Step 1: Cook the Rice
- Boil water with salt and whole spices.
- Add soaked rice and cook until 90% done.
- Drain and set aside.
Step 2: Prepare the Gravy
- Heat oil/ghee in a heavy pan.
- Add onions, sauté until golden brown.
- Add ginger-garlic paste, cook for a minute.
- Add tomatoes, turmeric, chili powder, salt, and Kumbh Biryani Masala.
- Cook until tomatoes soften.
- Add vegetables and cook for 5–10 mins.
- Add yogurt, cook until mixture thickens and oil separates.
- Add mint and coriander leaves.
Step 3: Layer the Biryani
- In a heavy-bottomed pot, spread half of the rice.
- Add the gravy mixture on top.
- Add the remaining rice as the top layer.
- Sprinkle saffron milk, fried onions, and more mint/coriander.
Step 4: Dum Cook
- Cover with a tight lid or seal with dough.
- Cook on low heat for 20–25 minutes (or place on a tawa for gentle heat).
