Dabeli Pav Recipe (Kutchi Street Style)

Here’s a street-style Dabeli Pav Recipe — a spicy, tangy, sweet mashed potato filling stuffed in ladi pav, garnished with sev, chutneys, pomegranate, and made irresistible with Kumbh Dabeli Masala.

Ingredients
  

For the Dabeli Filling:
  • Boiled potatoes – 3 medium mashed
  • Oil or butter – 2 tbsp
  • Kumbh Dabeli Masala – 2 tbsp
  • Tamarind chutney – 2 tbsp
  • Salt – to taste
  • Water – ¼ cup
For Assembly:
  • Ladi pav – 4 to 6 pieces
  • Sweet tamarind chutney – 4 tbsp
  • Green chutney – 4 tbsp
  • Finely chopped onions – ½ cup
  • Pomegranate seeds – ¼ cup
  • Roasted peanuts – ¼ cup
  • Nylon sev – ½ cup
  • Butter – for toasting pav

Method
 

Step 1: Prepare Dabeli Filling
  1. Heat oil or butter in a pan.
  2. Add Kumbh Dabeli Masala, stir for a few seconds.
  3. Add mashed potatoes, tamarind chutney, salt, and water.
  4. Mix well and cook for 3–4 minutes until smooth.
  5. Let it cool and set aside.
Step 2: Assemble the Dabeli Pav
  1. Slice pav horizontally but not completely (keep hinged).
  2. Spread green chutney on one side, tamarind chutney on the other.
  3. Stuff 2–3 tbsp of the potato filling into the pav.
  4. Add chopped onions, peanuts, pomegranate, and sev inside.
Step 3: Toast and Serve
  1. Heat a tawa with some butter.
  2. Place stuffed pav and toast on both sides till crisp and golden.
  3. Serve hot with extra sev and chutney on the side.

Notes

Masala chai
Buttermilk
Fried green chili (street-style touch!)
You can prepare the filling in advance and refrigerate it.
Use soft pav buns and toast them on low heat for a crispy outside and soft inside.
